What's for breakfast? In the Land of Pink today it was "Refrigerator Oatmeal".
When I first saw this recipe, I thought, "There is no way would I like COLD oatmeal." But, then I tried it. LOOOOVE it! And since it is slated to be 91° here - on the 25th of OCTOBER!! - I'm not in the mood for hot anything.
1/2 cup Old Fashioned Oats
1/2 cup Almond Milk
**I use the vanilla flavored, but if you want to avoid sugar you could use the unflavored. And if you don't mind the hormone-filled, lactose-laden version, go ahead and use bovine milk. Not that I'm judging ;-)
Mix them together and put in the fridge overnight.
I like to add another splash of almond milk, a sprinkling of chopped pecans, and today I tossed in some organic granola. The kids love this, too!
